Chicken Tacos




This might be one of my favorite meals ever, because I LOVE not having to work too hard for a "belicious" (oh yeah, thats how Jackson says delicious) dinner--This is why I LOVE crock pot meals-- Plus, it's HECKA good!

Chicken Tacos
2-4 chicken breasts (it's totally fine if they are frozen)
1 Jar of salsa - I love Pace Chunky Mild Salsa, but I've used Great Value Corn and Black Bean salsa and it was awesome too!
Tortillas
and whatever you like on your tacos, we usually have:
Cheese
Sour cream
Guacomole
Lettuce
Rice
So, you just throw the chicken
and the whole jar of salsa into the crock pot and wait about 4 hours (unless the chicken was thawed, then you only need to wait about 2 hours) then shred the chicken-- It should fall apart, if you are having to work pretty hard to shred it, it hasn't cooked long enough. After shredding, let it soak up the salsa juices some more-- maybe 1/2 an hour-- then serve on tortillas and enjoy!


Sometimes we put the chicken into the tortilla with some cheese and sour cream and then grill it on the foreman grill, and it becomes our version of "grilled stuffed burritos" -- I reccomend this! YUMM!

My two year old loves these! He was too impatient (okay, hungry) to wait for the grilled stuffed kind, so his ended up coming out the end... He ate a lot of it with a fork, and didn't seem to mind.


You can always put this over rice- minus the tortilla or whatever suits your fancy!

Make it your own, remember what my mom always said, "a recipe is just a guideline! Do what you'd like with it!"
